½ C. olive oil
2 cloves garlic, chopped
¼ C. basil, chopped
2 lbs ahi, cut in 4- ½” thick fillets
(note: works well with dorado or yellowtail also)
2 C. bread crumbs (Fr. or Ital. bread)
¼ C. macadamia nuts, chopped
2 eggs
2 T butter
1 lemon, cut in 8 pieces
4 T Italian parsley
Mix olive oil, garlic and basil. Marinate fish 2-12 hrs in frig. Preheat oven 350 degrees. If making own bread crumbs, slice bread 1 and ½” thick and bake 15 min. Toast nuts. Process bread into crumbs. Mix with nuts. Remove fish from marinade. Dip in egg, then in crumbs. Pat crumbs into fish, coating all sides. In pan over med. heat, add butter. When it foams, add fish. Cook until golden brown, adding butter if needed. When done, squeeze 1 lemon wedge over each piece and sprinkle with parsley.
