Breaded

INGREDIENTS

  • ½ cup olive oil
  • 2 cloves garlic, chopped
  • ¼ cup basil, chopped
  • 2 lbs ahi, cut in 4 - ½ inch thick fillets (note: works well with dorado or yellowtail also)
  • 2 cups bread crumbs (Fr. or Ital. bread)
  • ¼ cup macadamia nuts, chopped
  • 2 eggs
  • 2 tbsp butter
  • 1 lemon, cut in 8 pieces
  • 4 tbsp Italian parsley

INSTRUCTIONS

Mix olive oil, garlic and basil. Marinate fish 2-12 hrs in frig. Preheat oven 350 degrees. If making own bread crumbs, slice bread 1 and ½ inch thick and bake 15 min. Toast nuts. Process bread into crumbs. Mix with nuts. Remove fish from marinade. Dip in egg, then in crumbs. Pat crumbs into fish, coating all sides. In pan over med. heat, add butter. When it foams, add fish. Cook until golden brown, adding butter if needed. When done, squeeze 1 lemon wedge over each piece and sprinkle with parsley.

INGREDIENTS

  • 2 lbs fish fillets- sliced thin
  • 2 fresh lemons cut in half
  • 4 garlic cloves
  • 2 tbsp olive oil
  • ½ cup parmesan cheese..grated
  • ¼ tbsp butter...melted
  • 4 tbsp mayonnaise
  • 3 tbsp chopped green onion
  • ¼ tsp salt
  • 3 dashes hot sauce

INSTRUCTIONS

Line a baking pan with olive oil and garlic, and brush on fish Combine cheese, butter, mayo, onions, salt and hot sauce in a bowl Place fish fillets in pan and squeeze lemons on them Bake at 375 degrees until flaky...approx 10 minutes Remove from oven and spread cheese mixture on fish Change oven to high broil Broil until cheese is lightly brown and bubbly..approx. 1-2 minutes Enjoy!
